XL Chocolate Chip Cookies for 2

Ingredients:

  • 1 egg
  • 1/2 Cup of flour (we like gluten-free 1:1 or almond flour)
  • 1/8 teaspoon baking soda
  • 1 tablespoon Maddie's Natural Sweetener
  • Chocolate chips (as many as your heart desires)
  • A pinch of salt
  • 3 tablespoons browned vegan butter (or sub melted coconut oil)
  • 1/8 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons creamy peanut butter

Instructions:

  • Brown the Butter: In a small saucepan, melt the vegan butter over medium-low heat. Continue cooking until you start to smell a nutty aroma. Then, stir in Maddie's Natural Sweetener until well combined. Remove from heat and let it cool slightly.
  • Mix Dry Ingredients: In a mixing bowl, combine the flour, baking soda, salt, and cinnamon.
  • Combine Wet and Dry Ingredients: Add the browned butter and sweetener mixture to the dry ingredients. Then, add the egg, hazelnut extract, vanilla extract, and peanut butter. Mix until just combined.
  • Add Chocolate Chips: Fold in chocolate chips to your heart's desire.
  • Chill the Dough: Let the dough chill in the refrigerator for about 5 minutes. This helps the cookies maintain their shape and enhances the flavors.
  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Bake: Spoon out the dough onto a baking sheet lined with parchment paper. Bake for approximately 18 minutes or until the cookies are golden around the edges but still soft in the center.
  • Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
